ok so I understand if I just use my plain Jane SBZ I will need to get some headphones 32 ohms or less. However I have a stereo receiver sitting in the room with me that I'm sure can amplify well beyond 32 ohms. Would it be advantageous for me to buy some 600ohm headphones? I'm a noob so I'm asking dumb questions. I know.

No with 600ohm headphones you will hear nothing you wouldn't hear with 32ohm headphones. Assuming both headphones have similar quality.

assuming that I use them for is gaming, but I use my computer to watch movies and listen to tunes.

the sbz supports upto 600ohms...but some 600 ohm headphones dont seem to get powered enough by it. I have 250ohms they perfectly fine gaming the 600 ohm version prolly only difference I could notice would be music wise but never tried them so I don't know for sure.

It depends on the audio source material. Most digitized (even lossless formats like flac might have a bad original source) audio material do not offer sound stage that is necessary to make a 600ohm headphone shine. There is also always a placebo effect involved.

Of course if you have a proper music set with good analog sources (preferably good quality LPs) and an audiophile ear, you surely will enjoy a good headphone.

Sennheiser Orpheus has for instance 2.4-micrometer thick, platinum-coated diaphragms and comes with an amp that drives up to 10k ohms :)
